Cajun and Creole food is the product of Southern Louisiana. This eclectic and interesting cuisine has developed over the centuries to reflect the many peoples who have setteld in the area including French, Spanish, English, West Indians and Africans and could be said to be the origianl 'fusion' food. A large area of Louisianna is covered in water accounting for the popularity of fish and seasfood in the creation of dishes.
