Knife Skills
Knives are the most vital tool in the kitchen and using them correctly can make the difference between being an ok cook and a really good cook. Yet how many of us know which knife will suit and how to look after it, let alone how to begin to slice and dice like those bods on the tv. During your day with us we will show you what to look for when purchasing a knife as well as how to care for it. You will learn which knives to use for which task and we will demonstrate a number of options for caring and sharpening your knives. During the practical session you will dice, slice and chiffonade your way through a range of vegetables, herbs and fruits. The Tutor will be on hand to help you correct your technique. The items prepared will be turned into a delicious lunch by our staff for you to share together before the completion of the course. All recipes cooked will be incorporated into the course pack.

Knife Skills 2
Adding to your repertoire we will look at jointing and boning a range of meat products. You will be shown how to prepare both a white and a brown stock for use in cooking and reduction sauces. The meats prepared will be cooked using a range of methods from slow cooking and poaching to pan frying and griddling and different cuts and cooking methods will be discussed throughout the day. in the afternoon a local butcher offers a lively demonstration and discussion session.

Fish and Shellfish
During this action packed day you will learn how to deal with a range of fish and shellfish from scratch. You will learn to fillet both a round and a flat fish (learning to gut and de scale is also an option). There will also be a seasonal range of crustaceans and shellfish (depending on what is available). The preparation session will be followed by both demonstration and practical sessions to turn the prepared fish into simple and tasty dishes which we will sit to eat together before the session ends.
World of Bread 1
This is an action packed hands on day. You will be introduced to the ingredients that go into preparing bread learning the theory behind the process for each. Working with an exciting range of flours and additional ingredients you will be guided to prepare a range of loaves and buns. Techniques for working by hand and with kitchen machines will be taught.
You will lunch on some of the bread prepared accompanied by a vegetarian house soup, cheeses and pickles and for dessert a classic bread based queen of puddings.
Everything prepared will be yours to take home.
