Kitchen Confidence 1: Learn Basic Skills

A one day hands on course aimed at inspiring those who lack confidence in the kitchen or who wish to expand their current repertoire. The day focuses on good basic techniques and skills as well as introducing you to the lingo of the cookery book. This day can be undertaken instead of Men in the Kitchen 1.

The dishes cooked will be enjoyed with a glass of wine for lunch. Type of dish cooked: simple starters such as tomato and prosciutto tarts, lasagna, simple salads, hot orange puddings.

Confidence with Fish Cookery

This day aims to demystify simple fish cookery as well as to inspire you to expand your repertoire. The day will involve both demonstration and hands on sessions. You will work with types and cuts of fish that are readily available in shops and fish mongers. You will learn a range of cooking techniques and methods, as well as serving suggestions and sauce accompaniments. You will taste everything demonstrated and prepare a delicious lunch to enjoy together before leaving inspired for home. Type of dish cooked; salmon fillets with orange and saffron sauce, smoked fish crumble or gougier, chermoula spiced prawns, Sichuan spiced squid.

Kitchen Confidence 2: Expand your repertoire

This day builds on the skills of Kitchen confidence 1 as well as to inspiring you to expand your repertoire. The day will involve both demonstration and hands on sessions.  This day can be undertaken instead of Men in the Kitchen 2.  The dishes cooked will be enjoyed with a glass of wine for lunch. Type of dish cooked: Lamb korma, Coq au vin, gratin dauphnoise potatoes, gooey choclate puddings.

Confidence with Fresh Family Meals: Inspire your family to eat well

This day aims to inspire you with fresh and healthy dishes for family eating. The day will involve both demonstration and hands on sessions. You will work with a range of seasonal ingredients to produce some tasty and healthy dishes. You will learn a range of cooking techniques and methods as well as serving suggestions. You will taste everything demonstrated and prepare a delicious lunch to enjoy together before leaving inspired for home. Type of dish cooked; carrot or beetroot humus, cauliflower dhal, red pepper or sweet potato pithivier, chickne in a cheese and sherry sauce and a range of simple tasty desserts.
